Caramel Apple Salad


  • 6oz Greek yogurt
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 2 medium Golden Delicious apples, cut into ½-inch dice
  • 1 cup finely chopped or shredded green cabbage (about a quarter of a small cabbage)
  • 2 tbsp chopped pecans



  • In a bowl, mix together the yogurt, brown sugar and vanilla to make the dressing.
  • Combine the apples, cabbage, and pecans in a large bowl.
  • Pour the dressing over the apple/cabbage mixture. 
  • Refrigerate for 30 minutes.
