Caramel Apple Salad
- 6oz Greek yogurt
- 2 tbsp brown sugar
- 1 tsp vanilla extract
- 2 medium Golden Delicious apples, cut into ½-inch dice
- 1 cup finely chopped or shredded green cabbage (about a quarter of a small cabbage)
- 2 tbsp chopped pecans
- In a bowl, mix together the yogurt, brown sugar and vanilla to make the dressing.
- Combine the apples, cabbage, and pecans in a large bowl.
- Pour the dressing over the apple/cabbage mixture.
- Refrigerate for 30 minutes.
