Breakfast Burrito


  • 8 large eggs, beaten
  • Four 8-inch whole wheat flour tortillas
  • 1/4 to 1/2 cup salsa
  • 1/2 to 1 cup shredded cheddar cheese


  • Scramble the eggs in a large skillet.
  • Place the cooked eggs evenly down the center of each tortilla. 
  • Top with vegetables, or to make it faster, use salsa. 
  • Sprinkle with the cheese.
  • Fold tortilla like a burrito and wrap in tin foil. Make ahead and keep in a warmer for quick service and grab and go. This makes the burritos turn moist and delicious.
